Job Description

The Lead Cook prepares and cooks food according to recipes, quality and presentation standards, and food preparation checklists at St. Kitts Marriott Resort & The Royal Beach Casino in Frigate Bay. Responsibilities include preparing special meals and cold foods; regulating cooking equipment temperatures; thawing frozen food safely; maintaining food logs; monitoring food quality and quantity; and ensuring proper portions, arrangement, and garnish. The role also involves communicating busy-period support needs, informing the Chef about excess food for use in daily specials, and notifying Food & Beverage service staff about menu specials and unavailable items. The Lead Cook supports management with hiring, training, scheduling, evaluation, counseling, discipline, motivation, and coaching of employees. The position requires following company, safety, and security procedures; reporting maintenance needs, accidents, injuries, and unsafe conditions; completing safety training and certifications; maintaining a clean and professional appearance; protecting confidential information and company assets; and addressing guests’ service needs. The work includes extended periods of standing, sitting, or walking, as well as bending, twisting, reaching, and moving objects weighing up to 25 pounds without assistance.
